Description

A simple, nourishing sheet pan dinner made with juicy chicken thighs and roasted vegetables. This one-pan recipe is perfect for meal prep, budget-friendly, and packed with flavor from fresh herbs and garlic.


Ingredients

  • 12 oz whole carrots (68 medium), cut into 2- to 3-inch sticks

  • 12 oz green beans (2 large handfuls), washed and trimmed

  • 12 oz baby red potatoes, halved or quartered (or cubed sweet potato)

  • 1 medium red onion, cut into wedges

  • 34 garlic cloves, minced

  • 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried rosemary)

  • 2 teaspoons fresh thyme leaves (or ¾ teaspoon dried thyme)

  • ½ tablespoon olive oil or avocado oil (use 1 tablespoon if using skinless chicken)

  • 2 lbs bone-in, skin-on chicken thighs (or 1 lb boneless, skinless thighs)

  • ½ teaspoon fine salt

  • ½ teaspoon black pepper


Instructions

  1. Preheat the oven to 425ºF. Line a large rimmed baking sheet with parchment paper.
  2. Toss the chopped vegetables and herbs with oil directly on the baking sheet.
  3. Nestle the chicken thighs among the vegetables, sitting them slightly on top.
  4. Season the chicken and veggies with salt and pepper.
  5. Roast for 30–35 minutes, tossing the vegetables every 10 minutes, until the chicken is cooked through and potatoes are tender.
  6. Serve hot, or portion into containers for meal prep.

Notes

Use bone-in, skin-on chicken for maximum flavor, or swap for boneless thighs for a lighter version.

Sweet potatoes can be swapped for red potatoes.

Store leftovers in airtight containers for up to 4 days.
