Ingredients
For the Sweet Potatoes:
2 medium sweet potatoes, cut into 1/2-inch cubes

Instructions
- Roast or Air Fry the Sweet Potatoes:
If roasting, preheat the oven to 400°F (no preheating needed for the air fryer). In a medium bowl, toss sweet potatoes with oil, salt, and pepper. Roast in the oven for 15–20 minutes, flipping halfway, or air fry at 400°F for 12 minutes, shaking the basket occasionally, until tender and slightly caramelized. - Brown the Beef:
Heat a large skillet over medium-high heat. Add oil, then beef, onion, tomato paste, chili powder, cumin, garlic powder, salt, and black pepper. Cook, breaking up the beef, until browned and fully cooked, about 7 minutes. - Assemble the Bowls:
Place sweet potatoes as the base. Top with a scoop of beef, cottage cheese, avocado slices, a drizzle of hot honey, and a sprinkle of red pepper flakes. Serve immediately.
Notes
To Store:
Place beef and sweet potatoes together in one airtight container, and store toppings separately. Refrigerate for up to 3 days.
To Reheat:
Warm beef and potatoes in a skillet or microwave until heated through. Add fresh toppings right before serving.
