Classic meatloaf recipe with zesty glaze that’s juicy, tender, and topped with a tangy-sweet finish. Perfect for weeknight dinners or family gatherings.
Ingredients
For the Glaze:
¾ cup ketchup
1 ½ teaspoon white vinegar
1 teaspoon Worcestershire sauce
2 ½ teaspoon brown sugar
1 teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon ground black pepper
For the Meatloaf Base (Suggested to Complete Recipe):
2 pounds ground beef (80–85% lean)
1 cup breadcrumbs (or substitute)
2 large eggs, lightly beaten
1 medium onion, finely diced
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon Worcestershire sauce
Instructions
- Preheat oven to 350°F (175°C) and prepare a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, salt, pepper, and Worcestershire sauce. Mix gently until just combined—avoid overmixing. Shape the mixture into a loaf and place it on the prepared baking sheet or in the loaf pan.
- Bake for 40–45 minutes.
- Meanwhile, whisk all glaze ingredients in a small bowl until smooth.
- After the initial bake, remove the meatloaf from the oven and spread the glaze evenly over the top.
- Return to the oven for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is slightly caramelized.
- Rest for 10 minutes before slicing, then serve warm.
Notes
For added moisture, stir ½ cup of milk into the meatloaf mixture.
You can also substitute the breadcrumbs with oats, crushed crackers, or panko if preferred.
Store any leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
