Description
This Philly Cheesesteak Meal Prep is one of the best easy ground beef meal prep recipes—loaded with tender beef, sautéed vegetables, melty cheese, and served with rice for a quick, satisfying lunch or dinner all week.
Ingredients
1–1.5 lbs lean ground beef
1 medium green pepper, diced
1 small onion, sliced
2 cups sliced mushrooms
2 teaspoons Worcestershire sauce
1/4 cup beef broth
1 cup shredded colby jack cheese (or provolone)
1 cup cooked basmati rice
Instructions
- Cook the rice following the package instructions.
- While the rice is cooking, warm a large skillet over medium heat and cook the ground beef until it’s about halfway done.
- Add the green pepper, onion, and mushrooms to the skillet, and continue cooking until the beef is fully cooked, draining any excess fat if necessary.
- Mix in the Worcestershire sauce and beef broth, letting it simmer for 2–3 minutes until most of the liquid has been absorbed.
- Remove from the heat and stir in the cheese, allowing the residual heat to melt it evenly into the mixture.
- Portion the beef mixture into 3–4 meal prep containers, adding 1/2 cup of cooked rice to each.
- Let cool completely before sealing and storing in the refrigerator for up to 4 days.
Notes
Substitute cauliflower rice for a lower-carb option.
Freeze for up to 3 months for longer storage.
