Description

This Philly Cheesesteak Meal Prep is one of the best easy ground beef meal prep recipes—loaded with tender beef, sautéed vegetables, melty cheese, and served with rice for a quick, satisfying lunch or dinner all week.

Ingredients

Scale
  • 11.5 lbs lean ground beef

  • 1 medium green pepper, diced

  • 1 small onion, sliced

  • 2 cups sliced mushrooms

  • 2 teaspoons Worcestershire sauce

  • 1/4 cup beef broth

  • 1 cup shredded colby jack cheese (or provolone)

  • 1 cup cooked basmati rice

Instructions

  • Cook the rice following the package instructions.
  • While the rice is cooking, warm a large skillet over medium heat and cook the ground beef until it’s about halfway done.
  • Add the green pepper, onion, and mushrooms to the skillet, and continue cooking until the beef is fully cooked, draining any excess fat if necessary.
  • Mix in the Worcestershire sauce and beef broth, letting it simmer for 2–3 minutes until most of the liquid has been absorbed.
  • Remove from the heat and stir in the cheese, allowing the residual heat to melt it evenly into the mixture.
  • Portion the beef mixture into 3–4 meal prep containers, adding 1/2 cup of cooked rice to each.
  • Let cool completely before sealing and storing in the refrigerator for up to 4 days.

Notes

Substitute cauliflower rice for a lower-carb option.

Freeze for up to 3 months for longer storage.
