Instructions

  1. Wash, scrub, and peel the potatoes. Cut into thick fries, roughly ¾-inch wide and 3 inches long.
  2. In a pot of salted simmering water, place a steamer basket or colander over the top and steam the potato sticks for 10–12 minutes, just until tender. Avoid overcooking.
  3. Transfer the steamed potatoes to a bowl and gently toss with olive oil.
  4. Arrange the fries in a single layer on a parchment-lined baking sheet. Bake at 450°F (230°C) for 10 minutes, rotate the pan, and bake for an additional 5–10 minutes until golden and crisp.
  5. While the fries bake, prepare the cheese sauce: melt butter in a saucepan over medium heat, whisk in flour to form a roux, then slowly pour in milk while whisking until smooth and slightly thickened.
  6. Stir in shredded cheese until fully melted and creamy.
  7. Remove fries from the oven and toss with Cajun seasoning.
  8. Drizzle with ranch dressing and about ¼ cup of the cheese sauce. Serve the remaining sauce and extra ranch on the side for dipping.
