Ingredients

6 medium russet potatoes

2 tablespoons flour
⅔ cup milk
2 cups shredded cheddar cheese
Instructions
- Wash, scrub, and peel the potatoes. Cut into thick fries, roughly ¾-inch wide and 3 inches long.
- In a pot of salted simmering water, place a steamer basket or colander over the top and steam the potato sticks for 10–12 minutes, just until tender. Avoid overcooking.
- Transfer the steamed potatoes to a bowl and gently toss with olive oil.
- Arrange the fries in a single layer on a parchment-lined baking sheet. Bake at 450°F (230°C) for 10 minutes, rotate the pan, and bake for an additional 5–10 minutes until golden and crisp.
- While the fries bake, prepare the cheese sauce: melt butter in a saucepan over medium heat, whisk in flour to form a roux, then slowly pour in milk while whisking until smooth and slightly thickened.
- Stir in shredded cheese until fully melted and creamy.
- Remove fries from the oven and toss with Cajun seasoning.
- Drizzle with ranch dressing and about ¼ cup of the cheese sauce. Serve the remaining sauce and extra ranch on the side for dipping.
