Description

This one-pot onion boil recipe transforms a humble onion into a buttery, melt-in-your-mouth meal. It’s budget-friendly, comforting, and meal-prep ready.


Ingredients

  • 1 large (15 oz) sweet onion, peeled

  • 1 tablespoon vegan butter

  • 1 tablespoon olive oil

  • 1 teaspoon Cajun seasoning

  • ¼ teaspoon salt

  • Optional: ¼ teaspoon garlic powder

  • Optional: ¼ teaspoon Old Bay seasoning

  • Optional: ½ cup baby potatoes, pearl onions, or carrots

  • Optional garnish: chopped parsley or a squeeze of lemon


Instructions

  1. Preheat the oven to 375°F.
  2. Using a melon baller, carve a hollow into the top of the onion, going about one-third of the way down.
  3. Set the onion in a small Dutch oven or an oven-safe skillet with a lid, then place the butter into the hollowed center.
  4. In a separate bowl, mix together olive oil, Cajun seasoning, garlic powder (if desired), and a pinch of salt. Drizzle this mixture over the onion, allowing it to run down the sides.
  5. Add ¼ cup of vegetable broth or water to the pot to provide steam.
  6. Cover and bake for 50–60 minutes, until the onion is tender when pierced with a fork and the center has a slight wobble.
  7. Uncover, drizzle with more olive oil or butter, and broil for 5–10 minutes until the top is caramelized.
  8. Serve warm, spooning the buttery juices over the onion. Garnish with parsley or a squeeze of lemon if you like.

Notes

Toss in baby potatoes, carrots, or pearl onions to make it a complete one-pot dish.

For extra aroma, add fresh herbs such as thyme or rosemary before roasting.

If using a larger Dutch oven, you can roast several onions at once for easy meal prep. Store any leftovers in airtight containers with a little broth.
