Ingredients
1 lb ground beef (80/20 blend, or sub ground turkey/chicken)
8 small flour tortillas (or corn/low-carb wraps)
1 cup shredded cheese (American, cheddar, or pepper jack)
½ cup sliced pickles
½ cup diced onions (optional)
Condiments of choice (mayo, ketchup, mustard, burger sauce)
Instructions
- Divide the ground beef into 8 small balls (about 2 ounces each).
- Heat a skillet or griddle over medium-high heat.
- Place a beef ball on the skillet, top with a tortilla, and immediately smash down with a spatula to press the beef thin against the tortilla.
- Cook until the beef is seared, then flip and top with cheese. Allow the cheese to melt.
- Repeat with remaining beef and tortillas.
- Add toppings (pickles, onions, sauces) as desired.
- For meal prep: let cool, then store tacos in airtight containers, or store components separately for the best texture.
Notes
Refrigerate for up to 3–4 days in airtight containers.
Warm in a skillet, oven, or air fryer to bring back crispiness; skip the microwave if you want to avoid soggy tortillas.
